EASY MANGO PICKLE

I got this recipe from a friend a long time back….. I keep on improvising it till it came out as I like it…… In India, this is a mango season….. So, naturally, this pickle is a must in our household.

INGREDIENTS : 3-4 raw mangoes, 1 tbsp rye (black mustard seeds), red chilli powder (according to taste), 1 pod garlic, few curry leaves, salt & sugar (according to taste), 1 cup oil.

DIRECTIONS : Wash the raw mangoes, dry them and cut them into tiny pieces…… Remove the cloves from the pod of garlic, peel & grind……. Heat oil in a pan……. Add rye, when it splutters add in curry leaves….. Stir & then add in garlic paste…… Lightly fry…… Add in mango pieces…… Sauté……… Now add in red chilli powder, salt and sugar…… Cook till oil leaves the sides…… Cool….. Bottle it in sterilised bottle.

NOTE : Sugar is optional, can make pickle without it….. Instead of cutting mango into tiny pieces, one can grate it.
